In Hungary the main celebration takes place on Xmas eve, that's when we give out the presents. Then the 1st and 2nd day of Xmas is normally reserved for family visits.
Traditional Hungarian Xmas eve dinner is fish soup and fried fish with potato salad (we also make rice but I don't think that counts for traditional). Next day people normally have stuffed chicken or other poultry with stewed red cabbage and potatoes with onion.
The traditional Hungarian Xmas cake is the so-called beigli, which you will soon find in every pastry-shop. Beigli comes with walnuts and with poppy seed. (Contrary to what you might have heard in England black poppy seed has no narcotic effect - so don't expect other side effects than perhaps putting on weight

) I have a very good recipe from my grandma, if you'd like to I could post it here.
As for cooking courses, I have no idea. I tend to cook whatever comes into my mind...
